Cherry Walnut Oat Muffins

Ingredients
1 1/2 cups Oats (rolled, divided)
1 tsp Baking Powder
1 Banana (ripe, mashed with fork)
2 tbsps Unsweetened Applesauce
1/4 tsp Sea Salt
1/3 cup Dried Cherries
1/3 cup Walnuts
1/3 cup Cinnamon
1/3 cup Nutmeg
Directions
1) Preheat the oven to 350 degrees F (177 degrees C) and brush jumbo muffin pan with melted coconut oil.
2) Add 1/2 cup of rolled oats to a high powered blender/processor and grind into oat flour.
3) In a large mixing bowl, add the remaining oats, baking powder, mashed banana, applesauce, cinnamon, nutmeg and sea salt and mix well. Fold in the dried cherries and walnuts then mix again until well combined.
4) Using wet hands, roll the dough into even balls and flatten slightly into the greased muffin pan. Place on the middle oven rack and bake for 15 minutes or 5 minutes longer for a crispier texture!
5) Remove muffins and let cool in the muffin pan while lightly drizzling the remaining maple syrup. Enjoy after cooled!
Notes
Switch Up the Dried Fruit: Use dried cranberries, apricots, figs or blueberries instead.
Leftovers: Store leftovers in an airtight container in the fridge for 4 to 5 days or freeze them.
Serving Size: One serving is equal to one muffin.
