Baja Fish Tacos (Kid Edition)

Ingredients

16 pieces Fish Sticks (frozen (4 per person))

2 Large Burrito Tortilla (cut into 4 triangles each)

1 cup Cilantro

1/2 Green Onion (sliced thin)

1 piece Carrot (large & finely sliced)

1/2 cup Rice Vinegar

Sea Salt (to taste)

4 servings Sriracha Mayo (to taste)

Directions

1) Pickle Carrots: To pickle, let carrots sit in a rice vinegar solution mixed with a little salt until meal is done.

2) Prepare fish sticks according to packaged directions.

3) Warm tortillas in the oven or on skillet for 1 minute.

4) When ready divide the fish sticks between the tacos. Top each flour tortilla triangle with remaining ingredients (cilantro leaves, 2 fish sticks, pickled carrots, green onion and sriracha mayo, Enjoy.

 

Notes

Leftovers: Refrigerate in an airtight container for up to three days. Assemble the tacos just before enjoying.

More Flavor: Add lime juice, salsa, and red onion.

Make Your Own Sriracha Mayo!: Create your own sriracha mayo by mixing 2 tbsp of mayo with 1 tbsp of sriracha sauce or more if you like it spicy!
